I am very fortunate to have friends in the food industry. These are the ones who understand me on a more foodie level. One such friend was kind enough to give me her recipe for the perfect raw chocolate slice. I have since made a few tweaks and added toppings of my own choice. This chocolate slice can be customized to suit what ever your palate fancies.
Makes 16 slices
Base:
2 cups Cashew Nuts
1 cup Dates
4 Tablespoon coconut oil (melted)
1 1/2 tablespoon Almond or Peanut Butter
1/2 teaspoon salt
Icing:
6 Tablespoons Coconut Oil (melted)
1 1/2 Tablespoons Maple Syrup
6 Tablespoons cacao powder
1 1/2 Tablespoon Coffee Powder
Put base ingredients into a food processor or high speed blender and blend until the base comes together. Place baking paper in a 8 x 8 or any square baking tray.
Press the base into the pan using the back of a spoon to form an even layer.
In a separate bowl mix all the icing ingredients together and pour over the base.
Place the tray into the freezer for at least an hour to set. Remove from the freezer after an hour and place in the fridge. Cut your slice evenly to serve.
