As soon as the weather allowed I had planted tomato plants. Patiently waiting as the young seedlings matured and started to fruit. It's amazing how quickly my garden started producing tomatoes in all sizes and colors. Abi and Eli love eating them and I grew up in a home where tomatoes grew abundantly. You could say tomatoes are a staple in our household and I could go on about the many uses of this vital ingredient in my kitchen. If you are looking for ways to jazz up the humble tomato look no further than my Confit tomato recipe. Pairing it with Thyme and Garlic and slow roasting to perfection transforms the simple tomato into something more sophisticated and bursting with flavor. When storing your gems of tomato use a glass container and add a good dollop of olive oil to cover them. Use the Confit in salads, eggs, quiche, pizzas, pasta, or simply topped on some warm sourdough as bruschetta. It makes me so happy to think I have a batch in my fridge readily available.
3 - 4 cups Tomatoes (sizes and variety can vary from cherry to medium)
1 bulb of garlic
8 - 9 sprigs of Thyme
1/4 cup Olive Oil and extra for storing
Flaked Sea Salt and Black Pepper to taste
Preheat oven to 160 degrees Celsius
Wash and pat dry your tomatoes. Slice a few to add more texture to your Confit
Slice off the top of your garlic bulb add it to a tray with the dry tomatoes.
Add Thyme to the tray and season with salt and pepper.
Drizzle the olive oil over the tomatoes and garlic and bake for 1 - 1.5 hours checking every 30 minutes. The tomatoes should be roasted through but still have some shape to it.
Allow to cool slightly before transferring it to a glass jar. Add more oil to submerge your tomatoes. Store in the refrigerator.
